The Mince Maven

Stuffed baked tomatoes served with cauliflower, broccoli and new potatoes. Yum.
I was seriously lacking culinary inspiration this afternoon, and a quick peek in the freezer confirmed that my options for dinner would be mince, mince or mince. So boring, I’m snoring. So I did what any modern mama would do. I asked the twitterverse for help.
I waited, and waited (for like two whole minutes), until finally an answer came, and it was a great one. Relieved, I tweeted: Just when I was thinking all my peeps must be “above” mince, @MitzyG saves the day

After that comment the tweets came thick and fast. It seemed everyone was keen to participate in the mince conversation. Other mums either wanted to share a favourite recipe that works with their kids, or wanted a little inspiration for the mince sitting in their own freezers! In the end I decided to cook stuffed tomatoes as MitzyG first suggested. I will now forevermore consider her, affectionately, Mitzy the Mince Maven.

Glad I could help. My kids are all grown and gone, but I remember those days of mince, mince, mince very well! Stuffed zuccini (or zumi as my kids called it) is my personal favorite.
Would you believe I am making meatballs tonight for dinner for the first time EVER!
I too have had many experiments with ‘mince many ways’!! I also do home made sausage rolls with mince… I usually hide grated carrot, pumpkin and peas in mine, and gravox for the sauce to hold it all together. Then just wrap in puff pastry and you’re done! I’ve also found you can hide lentils in them…just use a standard soup mix, and leave them soaking in boiled water all day til they’re soft and soggy. It it wrong that I’m not even a mother and I still hide vegies!?!

JanMary add some herbs and spices to your meatballs to add a little more taste. My kids love them..

Lasagne … thats what I made the other night and leftovers frozen for lunch.
Meatloaf but I haven’t made this for years and years .It was one of mum’s favourites.
Yes mince is a regular in my house too – it is perfect for hiding veg, veg and more veg. I have not graduated much past sheps pie, spag bol or meatloaf though. I’ll def try stuffing mince into something next time!

There’s nothing wrong with mince. Savoury mince did us well on many occasions. I actually prefer it on toast when it’s cold and miserable outside.
